Northern India menu recipes:

Lamb Curry in a Sweet Onion-Tomato Sauce

  • I use green cardamom in the lamb, not black cardamom, mostly because I like the flavor. Green cardamom is also much easier to source.



Saag (Greens with Garlic and Raisins)

  • This can be made with fresh or frozen spinach or fresh or frozen collard greens. My favorite is frozen collards - I just dump them in the pan right from the freezer and cook until they are heated through. If using frozen spinach, thaw and squeeze out excess water before adding to the pan.

  • This mathura palak paneer is my favorite version of the saag paneer my dad liked. (It's not the saag I was talking about that goes with the lamb - that's the other one.)
