Salmon Fettuccine Alfredo
Ingredients: Salmon fillets Italian dressing Cream cheese Seasoning of your choice 1 pound fettuccine pasta
Cream Sauce: ½ cup butter 2 teaspoons minced garlic ½ teaspoon Italian seasoning ½ teaspoon salt ¼ teaspoon pepper 1 ½ cups heavy whipping cream 2 cups freshly grated Parmesan cheese Serve with: Garlic bread (store-bought) – Slice bread where butter stays in the middle of each slice. Lay slices sideways on buttered griddle and toast both sides. Salad bar
Directions:
1. Preheat oven to 375°.
2. Use a 9”x13” glass pan and coat lightly with olive oil. Place salmon fillets skin side down in pan and season as you desire. (I typically just do salt and pepper, but capers and dill are also delicious.)
3. Pour a generous amount of Italian dressing over the salmon then slice cream cheese and lay 2-3 strips of cream cheese on each fillet.
4. Bake at 375° for approximately 35 minutes. (Meanwhile, make fettuccine alfredo - see steps 5-8.) Check if fully cooked by inserting fork in a thick fillet and twisting. If the salmon flakes, then it is done.
5. To make fettuccine alfredo, use a large pot to heat salted water to boiling. Add fettuccine and cook according to package instructions. Drain well. (You can save some pasta water to thin sauce later if needed.)
6. In a large skillet, melt butter over medium heat. Add garlic and sauté 1-2 minutes. Stir in other seasonings and cream.
7. Continue cooking sauce over medium heat until reduced, about 5-8 minutes. Slowly add Parmesan cheese to sauce whisking until cheese is melted.
8. Pour sauce over pasta and toss well. Place salmon fillets on top of fettuccine alfredo and serve.
